  • Light Brown Sugar, 1 cup
  • Confectioners’ Sugar, 4 cups, sifted
  • Evaporated Milk, ½ cup

  • Vanilla, 1 teaspoon

  1. In a saucepan over medium heat, mix together the butter and the brown sugar, until both melt for about 2 - 3 minutes. This should result in the formation of a smooth sauce.
  2. Stir in the milk and allow the mixture to come to a boil.
  3. Remove the icing from the heat and allow it to cool slightly. Now, add in the vanilla and milk and beat it with an electric whisk. This will cause the icing to become thick.

If you miss or make any mistake with the measurements, chances are high that the cake may not turn out to be the same way as you had expected it to be. The next important step is to follow the recipe to the T. Any changes in the process may end up making the cake similar to a brick. Sifting the flour before you use it in the batter will give the batter lightness. If you do not want to use shortening, then you can substitute it with either margarine, butter or applesauce. This will help in preserving moistness and richness, but remove some of the weight and bad fats from the cake. Now we will turn towards basic cake recipes.

For Cake
  • 2 sticks (1 cup) unsalted butter, softened
  • 4 large eggs, at room temperature

First make the cake followed by the frosting and filling. Preheat the oven to 350 degrees and also grease two 9 inch round cake pans. Line those pans with parchment paper and butter the paper. Take a bowl and sift baking powder, flour, salt and baking soda in it. In another mixing bowl, add sugar and butter, blend it in a mixer at medium speed, until the mixture is fluffy and pale. Now add in vanilla along with egg, one at a time. Beat well after each addition. When all the eggs are added, pour buttermilk and blend at low speed only to combine. In the end, add flour mixture gradually, until the entire mixture is well incorporated. Spread this cake batter on the prepared pan. Drip the pan from two inches up to discard any bubbles.   • Dash salt to taste
Preparation
Take a big bowl and put in all the egg whites and let it stand for 30 minutes. In an separate bowl mix flour, sugar, baking powder and salt. Now add the egg yolks, water, oil, lemon peel and vanilla. Mix all these ingredients well until they have all blended well. In the bowl of egg whites, add tartar cream and mix gently until it forms into soft peaks. Make sure it forms a batter. Now add this batter in an 10 inch ungreased pan and make sure you remove air pockets from the batter by using a knife. Now bake at it 325°F for at least an hour or until you see that the top of the cake is soft and bouncy. Now take the cake out and let it cool for an hour. Take the cake out of the pan by cutting its edges through a knife and serve it in a plate. For frosting, combine all the ingredients in a bowl and mix well. Pour on top of the cake and serve.

  • Corn starch, ½ cup
  • Granulated sugar, ½ cup
  • Water, ½ cup
  • Macapuno Syrup, ½ cup
  • Egg yolks, 7
  • Salt, 1 tsp
  • Pineapple juice, 2 tbsp
  • Vanilla, 1 tbsp
Preparation
Preheat the oven to 325°F. In a separate bowl add all purpose flour, cornstarch, baking powder and salt, mix well. After mixing them well add granulated sugar, cooking oil, egg yolks, water, macapuno syrup and pineapple juice. Now pour this batter in to a 10 inch ungreased tube pan. Bake for 55 minutes at 325°F and then for more 10 minutes at 350°F. Let it cool and serve chilled.
