  3. In a large bowl, using an electric whisk, beat the butter till it becomes fluffy.
  4. Now add one-third of the brown sugar and beat the butter. Next add another one third of the brown sugar and beat the butter further. Finish off with the addition of the last portion of brown sugar.
  5. Add in the white sugar, and beat the entire mixture thoroughly.
  6. Add in the eggs, one at a time, while beating continuously.
  7. Reduce the speed of the whisk and add in half the amount of the flour, followed by half the amount of the whisk. Only when these ingredients blend into the mixture well and add the remaining portions.
  8. Pour the batter into the greased pan and let it bake in the preheated oven for about an hour. You will know the cake is done when it browns at the edges, and when a skewer inserted in the cake comes out clean.
  9. Allow the cake to cool in the pan itself, for about 30 minutes. Then flip over the pan so that the cake comes out easily. Flip it over and let it rest on a wire rack so that it cools completely.
For the Caramel Frosting
  • Light Brown Sugar, 1 cup
  • Confectioners’ Sugar, 4 cups, sifted
  • Evaporated Milk, ½ cup
  • Butter, ½ cup (1 stick)
  • Vanilla, 1 teaspoon
Procedure
  1. In a saucepan over medium heat, mix together the butter and the brown sugar, until both melt for about 2 - 3 minutes. This should result in the formation of a smooth sauce.
  2. Stir in the milk and allow the mixture to come to a boil.
  3. Remove the icing from the heat and allow it to cool slightly. Now, add in the vanilla and milk and beat it with an electric whisk. This will cause the icing to become thick.
  4. Immediately pour it over the cake and let it set (sets immediately).

If you miss or make any mistake with the measurements, chances are high that the cake may not turn out to be the same way as you had expected it to be. The next important step is to follow the recipe to the T. Any changes in the process may end up making the cake similar to a brick. Sifting the flour before you use it in the batter will give the batter lightness. If you do not want to use shortening, then you can substitute it with either margarine, butter or applesauce. Take another large bowl and combine shortening, one and half cups white sugar and stir the mixture to attain fluffy texture. Then beat the eggs into the shortening, one at a time. Later, add the cocoa mixture to it. Combine buttermilk mixture and also gently add two and half cups of all-purpose flour to it. Mix the ingredients to incorporate properly. Combine vinegar and baking soda in a small bowl and then pour the mixture into the cake batter. Pour the batter into the greased pans and bake them in preheated oven for 30 minutes. Let the cake base cool completely. Refrigerate the base until the icing is prepared. To prepare the icing, add milk and 5 tablespoons of all-purpose flour in a small saucepan. Place the saucepan over low heat and cook the mixture by stirring constantly. Stir until the mixture attains thick texture. Then, remove the saucepan from heat and let it cool completely. Add one cup sugar, remaining vanilla extract and butter in a small bowl. Beat this mixture to make it light and fluffy. Pour the cooled milk mixture into the bowl and beat the mixture to attain the consistency required for icing.
